Totally. tbh, I think my favorites are either my nakiri or my offset bread/sandwich knife. I keep eyeing up a few kiritsukes, they look SO good. Though I am still a stainless scrub, when I can I get a carbon core though. I have dreamt of full carbon, but am waiting a little longer until I have some more space dedicated to my knives.

dude small restaurants are some of the most fun times of my life. Nothing fancy, but a broken, fun family that you get to work with everyday. Honestly I think a lot of people have an air around fine dining, but let me tell ya, my chefs that were multi michelin starred would serve whatever as long as it made people happy. Hospitality can be an art in so many ways, but at the end of the day, its just about how you make people feel

I probably could have found better places if it was what I wanted to ultimately do, but for me it was always a way to gain life skills as I work through high-school and post-secondary. And I totally get what you're laying down, different beast to what I wanted out of the job. Learned to really love and appreciate small cafes and local food.
